Seasoning your pork ribs

  • Once applied allow 1 to 2 hours
  • Allows enough time for the salt time to pull the moisture out of the meat, the pH balance to occur and importantly the moisture and flavour be sucked back down into the meat

Seasoning your pork ribs

  • Big fan of layering your seasonings
  • 3 Layers of rubs:
    1. Bottom: Salt based rub
    2. Middle: Flavour rub
    3. Top: Colour / sugar rub
  • Medium to light coating

How long to season your pork
