Mastering Low and Slow: Brisket Smoking Guide
You’ve come to the right place. Brisket can be a tough cut if you rush it—but with the right low and slow method, you’ll get amazing results every time.
Whether you’re just starting out or looking to improve your technique, these brisket smoking tips will set you up for success.
Start With a Good Cut
The better the brisket, the better the result.
Look for a full-packer brisket with good marbling (that’s the fat running through the meat). The fat helps keep the brisket moist during the long cook.
If you can, choose brisket from a butcher who knows their stuff. Ask for a piece with a thick flat and a decent-sized point—this will give you even cooking and better slices.
Trim and Season
Before you smoke the brisket, trim off any hard fat. You want to leave a thin layer of soft fat—around 5mm is ideal.
This helps the brisket stay juicy while letting the smoke get into the meat.
Keep your rub simple. Salt and pepper work great, or you can add garlic powder, paprika, or a touch of chilli for a bit more flavour.
Season all over and let it sit for at least 30 minutes before it goes on the smoker.
Once trimmed and seasoned, the next step is all about patience and control.
Set Up for Low and Slow
One of the most important brisket smoking tips is getting your smoker set to the right temp. You want it sitting between 110–120°C. Make sure to use a reliable smoker for stable heat and clean smoke.
Be sure to use woods like oak or hickory. Want a gentler flavour? Mix in some apple or cherry.
For best results, use a wireless meat thermometer so you’re not lifting the lid constantly.
Pro Tip: Once your brisket hits around 70°C, wrap it in butcher paper. This helps it push through the stall while still keeping a good bark.
Know When It’s Done and Serve it Right
A probe should slide in easily with no resistance. Once done, wrap it again and rest it in an esky or warm oven for 1–4 hours.
Always slice against the grain. Start at the flat end, then adjust your angle when cutting the point. This keeps every bite tender and easy to chew.
